Here is how to make it.
① buy high quality Kagoshima brand “Saigo Ume (plum)”, about 400 fully ripe ume (15 kg)
② wash ume with clean water
③ remove stem ends from ume by bamboo skewer
④ jam ume into the big container with salt
⑤ wait 1 month until ume vinegar comes out and fill the container
⑥ dry ume under the sun for 3 days and complete!
